Two years ago, after his diagnosis with metastasized prostate cancer, my FIL decided to follow the guidelines in a cancer survival book and go vegan. Certainly, this was a trauma for my excellent German bürgerliche cooking German MIL (who is an angel, BTW, but this is another story). Needless to say, we have all had to adjust all of our event cooking.

Today, I have finally (third time's a charm) mastered breading vegetables for vegans. I finally decided to ignore the internet (what do they know anyway) and use my kitchen chemistry knowledge to make it work.

Since I couldn't use eggs, I instead dipped the eggplant and zucchini slices in a 50/50 mix of water and cornstarch, then breaded them.

They fried beautifully golden brown and were the perfect level of done. Super happy

Veggie Sausages!

Herecy in Germany I know but I'm veggie and after months of trying various brands I have finally found one from Aldi that is bearable. All the usual expensive meat substitute ones from Rewe, Lidl and the like are not so good.

I haven't found anywhere in Germany to get Quorn ones... they are the best

If you can find them, I have found the Beyond Meat meatballs to be very tasty.

Chick-pea flour works nicely, too.
And falafel are hardly distinguishable from meatballs if made properly.

Not sure why, they make a lot of work, I could just eat bread from the food store instead🙂

Refried bean and chicken burritos. Why? Well, I have tortillas that are in danger of going bad.

Cooking nothing today, I made a big pot of soup a few days ago, just need to heat it up and add some slices of crunchy onion.

Fast food, I call it (speedy), but in Germany "fast" means nearly, I guess you can get "nearly food" at a fast food outlet 🙃

One of the best things about retirement is: no need any more to eat "nearly food", I make all my meals at home. Müsli is easy, fast, filling, makes a good main meal.

I do own a tin-opener but I am not sure when I last used it.

Kiddo is home for a while and we all needed comfort food. This chicken and mushroom pie was lovely….

Worked well with 1.5 packs of Rewe defrosted frozen puff pastry sheets (2 layers) and 2 packs of Rewe Bio diced Schinken (each 100g) bits. 1.5 level teaspoons of crushed dried thyme instead of fresh sprigs. Not much added salt necessary…stock (bought jars) and bacon were salty enough 😊
