Two years ago, after his diagnosis with metastasized prostate cancer, my FIL decided to follow the guidelines in a cancer survival book and go vegan. Certainly, this was a trauma for my excellent German bürgerliche cooking German MIL (who is an angel, BTW, but this is another story). Needless to say, we have all had to adjust all of our event cooking.
Today, I have finally (third time's a charm) mastered breading vegetables for vegans. I finally decided to ignore the internet (what do they know anyway) and use my kitchen chemistry knowledge to make it work.
Since I couldn't use eggs, I instead dipped the eggplant and zucchini slices in a 50/50 mix of water and cornstarch, then breaded them.
They fried beautifully golden brown and were the perfect level of done. Super happy

Veggie Sausages!
Herecy in Germany I know but I'm veggie and after months of trying various brands I have finally found one from Aldi that is bearable. All the usual expensive meat substitute ones from Rewe, Lidl and the like are not so good.

I haven't found anywhere in Germany to get Quorn ones... they are the best

Chick-pea flour works nicely, too.
And falafel are hardly distinguishable from meatballs if made properly.

Cooking nothing today, I made a big pot of soup a few days ago, just need to heat it up and add some slices of crunchy onion.
Fast food, I call it (speedy), but in Germany "fast" means nearly, I guess you can get "nearly food" at a fast food outlet
One of the best things about retirement is: no need any more to eat "nearly food", I make all my meals at home. Müsli is easy, fast, filling, makes a good main meal.
I do own a tin-opener but I am not sure when I last used it.

Worked well with 1.5 packs of Rewe defrosted frozen puff pastry sheets (2 layers) and 2 packs of Rewe Bio diced Schinken (each 100g) bits. 1.5 level teaspoons of crushed dried thyme instead of fresh sprigs. Not much added salt necessary…stock (bought jars) and bacon were salty enough

OK you good cooks on here. There is an Italian place here that mainly caters for good hotels and restaurants, but opens on Saturdays to the public. She has had lovely tartlettes (shortcrust) filled with a creamy lemon filling. I am pretty sure it is uncooked. Probably marscapone and lemon, not that sweet or over lemony, not at all yellow. I have found dozens of recipes on line, but most do not look right and trying to avoid too much experimenting as I am fat enough as it is at the mo.

Anyway, since we only have one portion left for today, I am going to add some more lentils, and a pack of frozen, creamed spinach to it today, and assume already that it will also taste wonderful!!!

I love this place! I don't cook but printed that simple one out for Himself. Will use Chipotle in place of the smoked Paprika. We use a lot of Chipotle.

I have always wanted to post on this thread since the tt germany times but I have always postponed. I will do it. I hope I can post pictures and recipe of stuff I cooked even if it is not from "today"

Fresh Cod Fillet topped with Tomatoes Confit with Mushroom on a Pumpking Cream
I usually love to mix mushrooms and pumpkin and I needed something to make the Cod Fillet less boring and flat.
The Cod Fillet is from ALDI, not the frozen one.
Preparations:
- Cod
Dry and then flour the fish fillet. Roast on a pan with some olive oil till they are cooked. Add bit of salt and pepper during the last part of the cooking.
- Tomatoes Confit
Use cherry tomatoes or miniroma rispen tomato. Cut in half, remove seeds if you prefer, add in a bowl and add salt, bit of raw sugar, origano, bit of pepper, olive oil. Put on a baking sheet/pan and cook in oven at low temperature (120-130 degress). When you see the tomato start to becoing soft, switch to grill mode and compelte the cooking (dont burn them).
YOu put them on top of the cod when you compose the plate.
- Mushrooms.
In a pan with olive oil fries some big piece of garlic (you have to recognize and remove later on) at medium temperature. They dont have to burn, at all. After a while add the mushroom and salt. As soon as the mushrooms start to release their water, try to take it with a spoon and save it in a a cup. At half cooking add thyme and pepper.
- Pumpkin cream
In a pot fries one onion in small pieces in olive oil. After few minutes add the diced pumpkin, salt, pepper. Add some vegetable broth (you can use also the powder one) in order to partially cover the piece of pumpkin and cover with a lid. Keep adding the broth as soon as it evaporates, till the pumpkin is cooked. You should not end up having waterish sauce with the pumpkins, so make sure the water/broth evaporate. When they are cooked add a bit of butter which will melt with the remaining heat. Wait till it get less hot, add a bit of milk (a fatty one), the juice of the mushrooms, bit of "grana" or "parmesan" cheese and blend with an immersion blender.
