any suggestions of Investments with Einlagensicherung, but better rates than savings account?

Only deposits in banks fall under Einlagensicherung (deposit insurance scheme).

The ones with German deposit insurance state in the row "Einlagensicherung durch" (= deposit insurance by):

• Entschädigungs­einrichtung deutscher Banken GmbH (gesetzliche Einlagen­sicherung): that's for the first 100,000€

• Einlagen­sicherungs­fonds des Bundesverbandes deutscher Banken e.V.: for the part of the deposit that exceeds 100,000€. By clicking on the "i" next to the bank name, you can find out how much above the legal 100,000€ are guaranteed.
  For example, it's 3 million for Isbank, but it will go down to 1 million in 2030:
