stolen/lost license plate

On Sunday I saw my car was missing a licence plate. Assumed stolen. Reported to the police station and received a Bescheinigung.
I've reserved a new licence plate number via the municipality website and ordered the physical plates via an online website, however the plates won't arrive until Thursday.
How urgently should the theft be reported to the Zulassungsstelle considering the theft is already reported to the police?
Should I go to the Zulassungsstelle tomorrow to report the plates stolen and start the process of registering new plates, or can I wait until Thursday/Monday when I have the plates and do everything in a single appointment?

You need a statement from the police that the old ones were stolen.
You need to bring that one old license plate so they can scratch the seal off.
You need a written statement from your insurance that they car with the new license plate will be insured.
You need to bring a valid TÜV (or whatever organisaton has done the last check) certificate.
Did I mention passport?
My suggestion is to get the process started as soon as possible.

I have everything except the insurance document; the municipality doesn't list that on their website as a requirement. Is that called the eVB number? I have an appointment today so I'll find out soon if they also require that. I assumed the municipality would automatically notify the insurer about the change of plates.

eVB is Elektronische Versicherungsbestätigung, Insurance companies give this number which is used to verify/confirm your insurance

Fortunately no eVB was required. They also didn't ask to see the TÜV certificate. Perhaps they have that information in their system. My insurer was also automatically notified.

Oops, while applying for an emissions sticker at
https://www.tuev-nord.de, I sent them a copy of my Fahrzeugbrief instead of my Fahrzeugschein. I should probably apply for a new Fahrzeugbrief now.

Because the Fahrzeugbrief can be used to register a vehicle and should never be shared with anyone. I assume that includes a copy. Loss or theft of this document needs to be reported to the Zulassungsstelle.

No; a copy doesn't.
And I doubt that TÜV would do anything impropriate with that data anyway.
