I'm not in IT, so I can't speak to every issue you've raised, but I am a longterm freelancer. As far as multiple clients are concerned, I always thought you just needed to have multiple clients, period, and the best way to prove this would be with invoices to different clients within a tax year. yes registration in case of Eigenbedarf is required, I guess he registered there to avoid penalty

The most likely scenario is that the 53.90€ was the "Net" price, and the 11.08€ tax is calculated specifically on the products plus a portion of the shipping, or the store is using a specialized VAT scheme for small businesses
